Chili Paneer Extravaganza: A Spicy Fusion Treat.

Ingredients:

  • Paneer-200 grams.
  • Capsicum(medium-sized)- 2.(Quarter cut) 
  • Maida flour- 2 tbsp.
  • Corn starch- 2 tbsp.
  • Ginger and garlic(chopped) - 1/2 tbsp. each.
  • Red Chili powder- 2 tbsp.
  • Onion(medium-sized)- 1.(quarter cut and layered)
  • Spring onions(chopped diagonally)- 2 stems.
  • Green chili- 2.
  • Soy sauce- 1 tea spoon.
  • Tomato ketchup- 1 tea spoon
  • Green chili sauce- 1 tea spoon.
  • Corn starch slurry ( corn starch + little water) - 1.5 tbsp.

Steps to follow:

  1. Make a simple mixture of Maida, corn flour, salt and water. (make sure that the consistency of this mixture is neither too thick nor too watery.)
  2. Cut the paneer into small cubes and toss them in a little corn starch in a separate bowl to achieve that extra crunch. Do not over do this step, as the paneer might break off.
  3. Add the paneer to the mixture and set it aside.
  4. Heat some oil in a pan and shallow-fry the paneer on medium flame. Flip the paneer to other side and take them out of the oil when they turn golden yellow.
  5. Add some ghee in a pan. After it heats up, add ginger, garlic and red chili. Stir them on medium-low flame for 2 mins.
  6. Add Capsicum and onion and and stir it for 1 min on medium flame.
  7. Add the sauces and toss the vegetables. Add a tiny bit of water for the sauce.
  8. Add the mixture of corn starch slurry and stir it till the gravy thickens.
  9. Add the paneer and stir it for 10 seconds. Then it out in a plate.
  10. Garnish with spring onions and roasted sesame seeds.

Precautions to take while cooking the dish:

  • While frying the paneer, make sure to not over-fry it. It should not become brown.
  • The Maida mixture should be just enough to cover all the paneer. Do not use too much of that mixture.
  • Do not cook the vegetables for a long time, as they might become soggy.
  • After adding paneer, do not let it be on flame for long as it will loose its crispy nature.

Monsoon.

I definitely would say that summer has my eternal hatred among all other seasons, but my second least favorite season is monsoon. There are no special monsoon rain activities. I feel really grateful to spend this time of monsoon at home because I really hate going out and getting wet.
